Here's the thing... I've never understood why people get all super stoked about turkey sandwiches after Thanksgiving. I think I've always pretended to like them the way other people do as an excuse to eat mayonnaise.
Not joking.
I think lots of my favorite foods are really just excuses to eat condiments.
Don't judge me, Judgey McJudgerson.
Anyway... not to toot my own horn... oh, who am I kidding? I totally made the perfect Leftover Sandwich today.
And I'm willing to share the recipe. Write it down.
1. Buy the biggest turkey you can find (approximately 24 pounds) so everybody has ample leftovers.
2. Brine your turkey.
3. Make the best. turkey. ever. for Thanksgiving dinner.
4. Eat and then subsequently hoard the turkey leftovers for your husband.
5. Make your sandwich:
Butter the outside of your sandwich bread (or tortilla, as in my case)
Lay both breads (buttered side down!) into frying pan
Add some smoked Gouda to both halves of the bread
Top with slices of cooked sweet potatoes on one side, and turkey leftovers on the other side
Top the potatoes with jellied cranberry sauce and the meat with two slices of crisp bacon
Grill until golden, and the cheese is melty.
Smush sandwich together (or fold in half like a taco...) and enjoy!
